Carrots are rich in beta-carotene, a precursor of vitamin A. This fat-soluble vitamin is important for healthy eyes and beautiful skin. The olive oil contained in the apple-carrot juice with ginger can be optimally utilised by the body. In addition olive oil supplies valuable unsaturated fatty acids.
If the olive oil taste is too dominant for you, you can also replace it with another high-quality vegetable oil. Linseed oil and rapeseed oil are also suitable.

- 500 grams carrots
- 2 Apple
- 2 stalks Lemon balm
- 1 pc ginger (about 10 g)
- 1 tsp cold pressed olive oil
- 1 Tbsp lemon juice (to taste)
Preparation steps
Rinse and peel the carrots completely. Rinse, quarter, and remove the seeds from the apples. Rinse and dry the lemon balm, and peel the ginger.
Process the carrots, apple, and ginger through a juice into glasses. Stir in the olive oil.
Season to taste with lemon juice, if you'd like. Garnish with 1 sprig of the lemon balm.
