2 Tbsps finely chopped candied orange

1 egg
100 grams sugar
75 milliliters sunflower oil
100 milliliters Orange juice
150 milliliters Buttermilk
40 grams Sunflower seed

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Line a muffin tin with paper baking cups.

Coarsely chop the dates. Peel the apple, cut into quarters, remove the core and coarsely grate. 

3.

Combine the flour, ground almonds, cinnamon, chopped orange peel, baking powder and baking soda in a large bowl. Whisk the egg, sugar, sunflower oil, orange juice and buttermilk until smooth. Stir the wet ingredients into the dry ingredients and mix until smooth. Fold the chopped dates and grated apples into the batter, spoon into the prepared muffin tin and sprinkle with sunflower seeds. Bake for 25-30 minutes, until a toothpick inserted comes out clean.

Remove from the oven and allow to cool for about 5 minutes before removing from the muffin tin. Cool completely on a wire rack.
