The juicy apple cheesecake contains little fat and is the healthier option thanks to the spelt flour. The apples give the cake an enchanting aroma and also provide a little vitamin C kick. The water-soluble vitamin protects our cells from free radicals, which can be caused by stress, smoking or certain eating habits.
The vegetable oil not only provides valuable fatty acids, but also determines the consistency of the dough - margarine, coconut oil or other solid fat cannot replace the oil.

Ingredients
- For the pastry
- 200 grams Quark
- 400 grams Pastry flour
- 1 packet Baking powder
- 2 eggs
- 120 grams sugar
- 4 Tbsps milk
- 8 Tbsps vegetable oil
- For the cream cheese
- 400 grams Quark
- 3 egg yolks
- 4 Tbsps Whipped cream
- 1 packet Vanilla sugar
- 1 tsp cornstarch
- 4 Tbsps sugar
- In addition
- 5 Apple
- 1 organic lemon (Juiced)
- 50 grams butter (flaked)
- 100 grams slivered almonds
Preparation steps
For the pastry: combine all ingredients in a bowl and knead with your hands or dough attachment of an electric mixer into smooth dough. Line buttered baking dish with pastry, making an edge all around.
For the cheese cream: whisk quark with egg yolks, cream, vanilla sugar, cornstarch and sugar until smooth. Spread mixture onto pastry. Peel apples, quarter and core, cut into slices. Combine with lemon juice and arrange on top of cream, overlapping. Dot with flaked butter and bake in preheated oven at 180°C (approximately 350°F) for about 35-40 minutes. Sprinkle with almonds and bake for 5 more minutes. Remove from oven and cool. Serve.
