1 pinch cayenne pepper
1 ½ kilograms (approximately 2 pounds)salted Fresh ham roast
2 Tbsps clarified butter

Preparation steps

In a small saucepan heat the apple jelly with the lemon juice and cayenne until melted. Rinse the ham and pat dry. Preheat the oven to 175°C (approximately 350°F). In a roasting pan set over 2 burners, melt butter and sear the ham on all sides. Then pour 200 ml (approximately 1 cup) of water into the pan. Brush the ham with a little glaze and bake 90 minutes. Brush with the remaining glaze and bake until heated through.

To serve, cut the roast into slices and garnish to taste with fruit.
