Preparation steps

Mix together the eggs, flour, sugar, milk and a pinch of salt until smooth. Allow to sit for 30 minutes.

Peel the apples and remove the core. Cut into thin, round slices and sprinkle with lemon juice. Melt the butter in a pan, add a quarter of the apple slices, pancake batter and 1-2 tablespoons of berries. Fry until golden brown, about 1-2 minutes  . With the help of a plate, turn the pancake over and bake until golden brown on the second side. Keep the finished pancakes warm in the oven at 80°C (approximately 175°F) and continue to make pancakes in this manner, until all the ingredients are used.

Arrange the apple and blueberry pancakes on plates and serve warm, sprinkled with sugar.
