500 grams Apple
100 milliliters Apple juice
100 grams sugar
4 Tbsps raisins
¼ tsp Ground cinnamon
4 green Cardamom
1 l Whole milk
200 grams Whipped cream
1 tsp cornstarch
1 Tbsp Rose water
3 Tbsps slivered almonds

Preparation steps

1.

Rinse and peel apples,quarter and core, cut into small pieces. Combine apple pieces with apple juice, sugar, raisins and cinnamon in a saucepan and simmer for 5-10 minutes. Apples should be soft but not falling apart. Let cool down.

Crush cardamom pods. Combine cardamom, milk and cream in a saucepan, bring to a boil and simmer for 45 minutes, reducing by half. Mix cornstarch with a little cold water and combine with milk mixture. Cook, stirring, for 10-15 minutes or until mixture thickens.

3.

Remove from heat, strain through a sieve and cool briefly. Combine still warm milk mixture with apple mixture. Add rose water and refrigerate. Toast flaked almonds in a dry pan and sprinkle on pudding. Serve.
