- 250 grams Pastry flour
- 1 kilogram potatoes
- salt
- 75 grams softened butter
- 50 grams Semolina
- 1 egg
- 2 egg yolks
- 1 ½ kilograms ripe Apricot
- Sugar cube
- 180 grams butter
- 150 grams breadcrumbs
- sugar
- cinnamon
Preparation steps
Prepare all ingredients and bring to room temperature.
Sift flour into a bowl.
Scrub potatoes and cook in salted water for 25-30 minutes, drain and let evaporate. Peel while still hot and press through a ricer into a bowl. Cool slightly and mix with butter, semolina, salt, egg and egg yolks, mix well. Combine with flour and knead with a dough attachment of a hand mixer until smooth.
Roll out on a floured surface into a roll and cut into the same number of thick slices as there are apricots.
Flatten dough slices until about 7 cm in diameter (approximately 3 inches).
Rinse and dry apricots, pit.
Fill each apricot with a sugar cube.
Place apricot into the middle of each dough slice and wrap well, sealing apricots well.
Shape dumplings into balls.
Place apricot dumplings into boiling salted water.
Cook, simmering. for about 10-15 minutes.
Remove apricot dumplings with a slotted spoon and drain.
Melt butter and saute breadcrumbs, stirring. Arrange dumplings on plates and sprinkle with breadcrumbs, sugar and cinnamon. Serve.
