Preparation steps

Mix the pastry flour and salt in a bowl and make a well in the centre. Mix the yeast in 75 ml (approximately ¼ - ½ cup) of lukewarm water and pour into the flour bowl, mix with a little flour. Cover and let rise for about 15 minutes.

Then knead the flour with 75-90 ml (approximately 1 cup) lukewarm water in a relatively firm dough. Vigorously knead until the dough is smooth and elastic. Cover the dough and let rise for 30 minutes in a warm place. Divide the dough into 2 portions share and roll out into flat bases.

For the topping, peel the garlic and chop finely. Peel the onions and cut into thin rings. Trim the artichokes, scrape out the hay and put the artichokes in lemon water immediately. Remove the artichokes from lemon water, pat dry, and cut in slices or chunks.

Heat olive oil in a pan and saute the artichokes with garlic. Place half of the onion rings on the pizza bases. Season the artichokes with salt and pepper, and spread over the pizza bases. Top with the grated pizza cheese and with the remaining onion rings.

Bake the pizzas successively in a preheated oven at 220°C (fan: 200°C, gas mark 4) (approximately 425°F) for 15-20 minutes.
