- 1 pc Celery root (about 7 ounces)
- ½ Fennel bulb (about 5 ounces)
- 1 bunch Arugula (about 3 ounces)
- 1 Endive (about 4 ounces)
- In addition: Ice cubes

Preparation steps
Rinse celery root and peel. For a garnish, cut 1 thin slice and set aside. Coarsely dice the rest.
Rinse fennel and coarsely chop.
Rinse arugula and spin dry. Rinse endive and roughly chop.
Cut reserved slice of celery root into thin strips.
Using an electric juicer, juice celery root, fennel, arugula and endive. Fill a glass with ice cubes and pour in juice. Serve immediately, garnished with celery root strips.
