1 Tbsp olive oil

Preparation steps

1.
Peel the citrus fruits with a sharp knife, removing all the white pith. Separate the segments by cutting down inside the segment skin and catching any juice into a bowl.
2.
Squeeze the fruit scraps by hand. Mix the juices with the honey, olive oil and salt and pepper to taste.
3.
Mix together the fruit segments and rocket.
4.
Arrange on serving plates and drizzle with the vinaigrette. Sprinkle with sesame seeds.
