- 2 Tbsps Pine nuts
- 1 Apple (washed; cored and diced)
- 2 Tbsps lemon juice
- 1 bunch Arugula (washed and shaken dry)
- ¼ cup Parmesan (grated)
- For the Dressing
- 1 Tbsp Red wine vinegar
- ½ tsp sugar
- salt (to taste)
- freshly ground Black pepper (to taste)
- 3 Tbsps olive oil
Preparation steps

Lightly toast the pine nuts in a dry frying pan set over medium heat. Set aside.

Sprinkle the diced apples with lemon juice. Place the arugula and the diced apples in a bowl.

For the Dressing:

Combine the vinegar and sugar. Season with salt and pepper. Add the olive oil, whisking until blended. Drizzle dressing over the arugula and apple mixture, tossing to coat. Sprinkle with toasted pine nuts and grated Parmesan cheese. Adjust seasoning. Divide among serving dishes. Serve.
