1 small shallot (minced)

16 ozs Brussels sprouts (halved and lightly sauteed)
2 ½ ozs Arugula
2 Radicchio (shredded)

Preparation steps

In a small bowl, whisk together the vinegar, cumin, ginger, oil, shallot. salt, and pepper.

Portion onto individual plates and serve with homemade croutons.
