250 grams Arugula
8 Tortillas
100 grams grated Cheese (z. B. Cheddar)

4 Tbsps vegetable oil

Preparation steps

1.

Peel and slice the potatoes. Rinse the arugula and shake dry.

Heat a little oil in a skillet and add a tortilla. Top the tortilla with a quarter of the potatoes and arugula and sprinkle a quarter of the cheese over the top. Season with salt and pepper, and place a second tortilla on it. Gently press down on the tortilla and saute until golden brown, 1-2 minutes. Carefully flip the tortilla over and saute until the cheese has melted and the quesadilla is golden brown. Repeat with the remaining ingredients. Quarter the quesadillas and serve.
