Serve these skewers with a simple salad dressed in a ginger vinaigrette.

- 3 Tbsps honey
- 4 Tbsps Oil
- ½ tsp ground cilantro
- ¼ tsp cayenne pepper
- 4 Tbsps lemon juice (or lime juice)
- 2 Tbsps soy sauce
- 2 boneless, skinless Chicken breasts (4 pieces)
- peppers (to taste)
- For Peanut Sauce
- 2 cups Coconut milk
- 1 tsp Chili flakes
- ½ tsp Caraway
- ½ tsp ground ginger
- ½ tsp ground cilantro
- 4 cloves garlic cloves (crushed)
- ¼ tsp salt
- ¼ cup Peanut butter
- ¼ cup Peanuts chopped finely for garnish (optional)
- 1 Cucumber (peeled and sliced)
Preparation steps
1.
Stir the first six ingredients together in a large bowl.

Slice the chicken into approximately 24 (1/2-inch wide) strips and add to the marinade mixture.

While the chicken marinates, prepare the sauce by placing the milk, chili flakes, caraway, ginger, coriander, garlic and salt in a small saucepan and bring to a boil. As soon as it boils, take it off the heat and let sit for 15 minutes.

Stir the peanut butter into the milk mixture and simmer until the sauce thickens slightly, about 5 minutes or so.

Preheat an outdoor grill for high heat and lightly oil grate. Thread the chicken onto skewers. Season with pepper, to taste. Grill the chicken, 2-3 minutes each side. Serve with peanut dipping sauce, and cucumber slices.
