- 40 grams ginger
- 1 chicken (1.2 kg)
- Star anise
- 1 dried chili pepper
- 250 grams Chinese Egg noodle
- 100 grams Spinach
- 200 grams shiitake mushrooms
- 1 Tbsp Lime juice
- 2 Tbsps light Fish sauce
Preparation steps
Cut onion in half and fry the cut surfaces in a large pot. Peel ginger, cut into slices and add to pot. Rinse the chicken, pat dry and add to the pot. Cover with water and bring to a boil. Reduce the heat and simmer for about 2 hours. Skim off the resulting foam and pour in water as needed. After about 1 hour add star anise and chile pepper.
Cook pasta according to instructions on the package. Rinse and trim the spinach. Clean the mushrooms and cut in half.
Remove the chicken from the broth and let cool. Pour the soup through a fine sieve and measure about 1.2 liters (approximately 5 cups) broth. Pour back into the pot, bring to a boil and season with lime juice and fish sauce. Add the mushrooms and the spinach into and cook until tender, 2-3 minutes.
Bone the chicken, remove the skin and cut the meat into slices or strips. Arrange together with the drained noodles in large bowls, pour hot soup into the bowls and serve.
