- 4 Chicken breasts
- fresh ginger
- 3 lemons (fresh)

- 1 tsp peppercorns
- 400 grams Napa cabbage
- 150 grams Snow peas
- 1 Papaya
- 100 grams Rice noodles
- 2 Tbsps sugar
- 2 Tbsps sweet Chili sauce (ready to use)
- 2 Tbsps asian Fish sauce (ready to use)
Preparation steps
Rinse chicken and pat dry. Peel 3 cm (approximately 1,5 inch) piece of ginger, cut into thin slices. Rinse lemons in hot water, peel one for zest and squeeze juice from another. Combine peppercorns, lemon zest and ginger with150 ml (approximately 1/2 cup) of water and bring to a boil. Add chicken and cook, covered, on low heat for 15 minutes. Let stand.
Rinse cabbage, cut into strips. Rinse and dry snow peas, cut diagonally into thin strips. Peel papaya, halve, remove seeds and cut into slices.
Cut chicken into slices. Cook noodles according to package instructions, drain and cut into pieces.
Combine lemon juice with sugar, chile and fish sauce, stir. Peel and grate ginger, add to sauce.
Combine cabbage, snow peas, papaya and noodles with sauce. Cut remaining lemon into wedges. Arrange salad on a plate, top with chicken and serve garnished with lemon wedges.
