4 Steak fillet
4 tsps Szechuan pepper
½ small Hokkaido pumpkin
1 bunch scallions
200 grams shiitake mushrooms
1 bunch small Radish
2 small Bok Choy
3 Tbsps Sesame seeds (black)
3 Tbsps sesame oil
1 Tbsp butter
salt

Oyster sauce
soy sauce (dark)
2 centiliters Plum wine

Preparation steps

Place steak in a freezer bag with soy sauce, rub soy sauce into meat slightly and let rest for 20 minutes. Then drain, heat 1-2 tablespoons of oil in a pan and fry steak on all sides for 2 minutes.Remove steak from the pan, season with coarse ground pepper and wrap in aluminum foil. Bake in a preheated oven at 100°C (approximately 200°F) for about 15-20 minutes.

Deglaze the pan with plum wine, oyster sauce and butter, remove pan from the heat and set aside.

Peel pumpkin, remove seeds and slice lengthwise into thin slices. Rinse bok choi and cut lengthwise into quarters. Rinse radishes, trim, remove any greens and cut into half or quarters. Trim mushrooms and cut into strips. Rinse scallions and cut diagonally into pieces. Blanch prepared vegetables except mushrooms in a pot with plenty of boiling salted water for 2 minutes. Drain, rinse with cold water and drain again. Heat remaining oil in another frying pan and sauté mushrooms, add vegetables, sauté another 2-5 minutes, add sesame seeds and season with a bit of soy sauce, salt and pepper.

Remove meat from the oven, add roasting juices to the sauce and heat again. Serve steaks with vegetables on plates and drizzle with the sauce.
