Steak with Pepper Sauce

- 800 grams new potatoes
- 600 grams green Beans
- salt
- 400 grams Spinach
- 1 garlic clove
- 4 Steak fillet (about 160 grams, such as ribeye)
- 2 Tbsps vegetable oil
- 1 shallot
- 1 Tbsp green peppers (pickled)
- 2 centiliters Cognac
- 150 milliliters Beef broth
- 100 milliliters Whipped cream
- 2 Tbsps butter
- Nutmeg
Preparation steps
Rinse the potatoes and steam for about 30 minutes. Rinse, trim and blanch the green beans for about 6 minutes in salted water. Drain and wash the beans with cold water.
Rinse, trim and blanch the spinach same way. Drain, wash with cold water and then squeeze the spinach to remove the excess water. Peel the garlic and chop finely.
Heat oil in drip pan and fry the steaks from both sides. Season with salt and pepper and cook for 5-12 minutes.
For the sauce, peel the shallot and chop finely. Take out the drippings from the steak and heat it in a pan, sauté the shallot and pickled pepper in it. Deglaze with the Cognac and pour in the broth. Allow to simmer and then stir in the cream. Season with salt.
Heat butter in another pan and sauté the garlic. Add in the spinach and season with salt and nutmeg. Take out the spinach and toss the green beans in remaining hot butter. Season with salt.
Place the spinach, green beans, steamed potatoes and the steak on plate and serve with little sauce.
