450 grams Cherry tomatoes (on the vine)
1 Tbsp olive oil
2 handfuls Arugula
4 Steak fillet (each about 200 grams)
3 Tbsps vegetable oil
coarse Sea salt

200 milliliters Beef broth
2 Tbsps green peppercorns (from a jar)
100 milliliters Whipped cream

Preparation steps

Preheat the oven to 100 ° C.

Rinse tomatoes on the vine, pat dry and place in a small and greased with olive oil baking dish. Rinse and spin dry arugula, cut out hard stems.

Rinse and pat dry steaks. Heat oil in a grill pan and cook steaks for about 3-5 minutes per side (depending on meat thickness and desired meat doneness). Remove from the pan and season with salt and pepper. Wrap in aluminum foil  and finish cooking in preheated oven at 100°C (approximately 200°F) for about 5 minutes. Place tomato pan together with steaks into the oven.

Prepare sauce. Peel shallot and chop finely. Saute in meat drippings until golden brown. Deglaze pan with broth, add peppercorns and simmer for about 5 minutes. Add cream and simmer until slightly creamy. Season with salt and pepper.

Remove steaks and tomatoes from the oven, add any resulting meat juices to the sauce. Arrange steaks on 4 warmed plates, place arugula and tomatoes next to them and season with salt and pepper. Drizzle with sauce and serve.
