1 organic lemon
2 Tbsps green peppers
4 Entrecote each about 200 grams (approximately 7 ounces)

clarified butter
3 Tbsps Crème fraiche
1 generous pinch sharp Mustard

Preparation steps

1.

Peel the lemon, grate the peel and mix with the green pepper. Salt the meat and trim the fat. Heat the butter in a pan. Brown the meat over high heat, then reduce the heat and cook the steak for about 3 minutes on each side, continually basting with the butter. 

2.

Remove the meat from the pan and let it rest on warmed plates. Stir the creme fraiche into the pepper-lemon mixture. Season with mustard and salt, to taste. Pour the sauce over the meat.
