Asian Pork Ribs

- 1 ½ kilograms Spare rib
- 4 Tbsps Plum butter (from a jar)
- 5 Tbsps soy sauce
- 50 milliliters Peanut oil
- 200 milliliters Orange juice
- 1 pc ginger
- 1 red chili pepper
- 2 scallions
- 200 grams Long grain rice
Preparation steps
Cut spareribs into individual ribs, place into a wide saucepan, cover with boiling water and cook for 25 minutes on medium heat. Combine soy sauce, oil, 2 tablespoons of plum jam and 150 ml (approximately 0.5 cup) of orange juice. Mix well. Peel ginger, chop very finely. Halve chile pepper lengthwise, remove seeds and cut into strips. Add ginger and chile to marinade. Drain spareribs, place into a shallow ovenproof dish and coat with half of marinade. Turn over once.
Prepare sauce. Combine remaining marinade with remaining plum and orange juice, mix well. Rinse and dry scallions and cut diagonally into rings. Grill ribs on hot grill for 10 minutes, turning over halfway through cooking. Prepare rice according to package instructions, drain. Place rice on plate, top with ribs, drizzle with plum sauce, garnish with scallions. Serve.
