1 ½ kilograms Pork ribs (divided by the butcher into individual ribs)
2 Oranges (organic)
3 Tbsps soy sauce
6 Tbsps tomato puree
2 Tbsps vegetable oil
1 tsp honey
1 Tbsp Sesame seeds
1 tsp ginger (freshly grated)
1 Red chili pepper

Preparation steps

1.

Cook pork ribs in boiling water for 45 minutes. 

2.

Grate orange zest. Squeeze juice from both oranges and combine with soy sauce, tomato paste, 2 tablespoons of oil, honey, sesame and ginger. 

3.

Halve chile pepper lengthwise, remove seeds and ribs, chop.

4.

Add chile pepper and 2 tablespoons of orange zest to marinade.

5.

Remove pork ribs from water and combine with marinade while still hot. Refrigerate, covered, for about 2-3 hours. 

6.

Arrange pork chops on a baking sheet, drizzle with marinade and roast under a hot broiler or on the grill until crispy, watching carefully. Arrange on a board with lettuce leaves and serve.
