Asian-style Beef Tartare with Rice-paper Flatbread

- 12 Rice paper
- 1 Tbsp finely chopped cilantro
- 1 tsp Lemongrass (very finely chopped)

- 280 grams Beef fillet
- 1 red onion
- ½ Cucumber
- soy sauce

- 2 Tbsps Lime juice
- 2 Tbsps soybean oil
- cayenne pepper
- mint (for garnish)
- 2 scallions
- 1 tsp dried garlic cloves
- 2 Tbsps coarse Sea salt
- Chili zest (for garnish)
Preparation steps
Individually moisturize rice-paper wrappers according to package instructions. Mix cilantro and lemongrass and spread half on 4 rice-paper wrappers. Top with 4 rice-paper wrappers and spread on remaining cilantro mixture. Top with remaining rice-paper wrappers, press firmly and fry successively in a pan in a little butter until golden brown.
Peel cucumber, halve lengthwise, remove seeds and cut into thin slices.
Coarsely crush dried garlic with sea salt using a mortar.
Pat beef pat dry and cut into small cubes. Mix soy sauce, pepper, lime juice and soybean oil, season with cayenne pepper and pour over beef. Cover beef mixture and refrigerate. Peel and halve red onion, cut one half into rings and chop the other half. Rinse scallions, finely chop white ends and cut green ends lengthwise into thin strips. Stir chopped red onion and chopped scallions into beef mixture and season to taste. Form beef mixture into cylinders on plates using rings. Arrange red onion rings, cucumber slices and chili zest decoratively on beef tartare. Garnish beef tartare with scallion strips and mint. Serve beef tartare with the rice-paper flatbread and garlic sea salt alongside.
