- 12 green Asparagus (spears)
- 1 green Bell pepper (diced)
- 1 red Bell pepper (diced)
- 1 lemon (juice)
- 6 Tbsps olive oil
- salt
- peppers
- 1 ¾ cups cooked Long grain rice
- 2 Tomatoes (diced)
- ½ bunch scallions (sliced)
- 5 ozs canned Sweet corn
- To garnish
- Basil
- Lemon wedge
Preparation steps
1.
Cook the asparagus in boiling salted water for 6 minutes. Add the peppers for the last 3 minutes. Drain and rinse in cold water. Drain again.
2.
Whisk together the lemon juice and olive oil. Season to taste with salt and pepper.
3.
Stir into the rice, then stir in all the vegetables.
4.
Divide the salad among the serving plates and garnish with basil and lemon wedges.
