- 2 Tbsps Avocado oil
- 1 large, red chili pepper (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 12 ozs Asparagus (woody ends removed)
- 1 ½ cups Snap pea
- 1 cup fresh green pea
- 1 head Broccoli (prepared into florets)
- 3 cups extra firm Tofu (cubed)
- 2 Tbsps low-sodium soy sauce
- 2 Tbsps Sesame seeds
Preparation steps

Heat a tablespoon of the oil in a large wok set over a high heat until hot. Add the chilli, garlic, and a pinch of salt and pepper.

Stir-fry for 30 seconds, and then add the asparagus, mange tout, broccoli, and petit pois. Cover the wok with a lid and continue to cook over a slightly reduced heat for 3 - 4 minutes until the vegetables are tender.

Add the soy sauce and adjust the seasoning to taste. Set the vegetables aside and preheat the grill to hot.

Toss the cubed tofu with the remaining oil and some salt and pepper. Grill for 4 - 5 minutes until golden and crisp, turning occasionally.

Toss the tofu with the vegetables. Spoon into bowls and serve with chopsticks.
