16 ozs ribbon pasta (fresh or dry)
salt (to taste)
8 ozs green Asparagus (washed and trimmed)
8 ozs white Asparagus (washed and trimmed)
2 Tbsps butter
1 Tbsp lemon juice
0.333 cup Vegetable broth
freshly ground Black pepper (to taste)
2 Tbsps Sour cream (or creme fraiche)
2 Tbsps fresh parsley (chopped)
¾ cup Parmesan (freshly grated)

Preparation steps

Prepare the pasta in salted, boiling water according to the package instructions.

Meanwhile, slice the prepared asparagus lengthwise into thin ribbons. Heat the butter in a skillet over medium heat. Cook the asparagus in the butter for about 1 minute. Add the lemon juice and vegetable broth; season with salt and pepper. Cover and cook for about 4 to 5 minutes.

Drain the pasta. Add the sour cream or creme fraiche to the asparagus, stirring to incorporate. Add the drained pasta to the pan. Season with parsley and mix well. Heat through for 1 minute or so.

Divide among plates. Season with freshly ground black pepper and Parmesan cheese. Serve.
