1 Tbsp lemon juice
100 milliliters Whipped cream (at least 30% fat content)

Preparation steps

Combine sugar with 150 ml water and boil until sugar dissolves completely. Remove from heat and let cool. Halve and pit avocados and remove the skin. Rinse basil and shake dry. Set aside some basil leaves for garnish and puree the rest in a blender with avocados, lemon juice and sugar syrup. Add cream and ricotta to mixture.

Place mixture in a metal bowl and freeze for about 4 hours. Stir frequently to avoid the formation of large ice crystals (or finish using an ice cream machine.) Scoop out balls of ice and serve garnished with basil leaves.
