Preparation steps

In a pot, bring sugar and 150 ml (approximately 2/3 cup) water to a boil. Stir in basil and simmer until sugar has completely dissolved. Remove pan from heat and let stand about 10 minutes.

Halve avocados, remove pits and scoop out flesh. In a blender, combine avocado with lemon juice. Strain sugar syrup through a sieve and add to blender. Puree until smooth. Whisk together puree with cream and ricotta. Transfer mixture to a metal container and freeze 4 hours, stirring frequently to prevent large ice crystals from forming. (Alternatively, process mixture in an ice cream maker, according to manufacturer's instructions.) Scoop into bowls and garnish with basil leaves.
