- Dough for 1 springform pan, 24 cm in diamete (approximately 9 inches)
- 250 grams Pastry flour
- 125 grams cold butter
- 1 egg yolk
- salt
- Pastry flour (for working surface)
- For topping
- 1 onion
- 100 grams smoked Bacon
- 200 grams Gruyere
- 2 Tbsps butter
- 1 Tbsp breadcrumbs
- 3 eggs
- 200 milliliters milk
- black peppers
- ¼ tsp sweet ground paprika
- butter (for the pan)
Preparation steps
Pour out the flour on the working surface, mix with salt and make a well in the center. Cut the butter into small pieces, distribute around the well, add the egg and 2 tablespoons of cold water.
Mix everything together until crumbly, then use your hands to knead into a dough. Form into a ball, wrap in plastic wrap and chill in the refrigerator for 30 minutes.
Peel and finely chop the onion.
FInely dice the bacon and cheese. In a pan heat 1 tablespoon of butter and sautée the onions. Sprinkle in the bacon, fry for 2 minutes and remove the pan from heat.
Roll out the dough between 2 sheets of parchment paper and place in the greased springform pan, making the edges thicker for the crust. Sprinkle with breadcrumbs.
Distribute the onions, bacon and cheese over the top. Beat the eggs with milk, pepper and paprika and pour over. Place the remaining butter in small pieces on top.
Bake in a preheated oven at 200°C (approximately 400°F) for about 45 minutes.
To serve, cut into pieces and garnish with lettuce and grapes, as desired.
