1 handful Thai basil
1 handful oregano
4 Tbsps olive oil
4 Tbsps lemon juice
18 ozs Rigatoni
cup Bacon (in rashers)
4 eggs
¾ cup cream cheese
crushed Red pepper flakes (ground)
4 Tbsps Parmesan (finely grated)
1 tsp lemon zest
2 slices white Bread (toasted and finely diced)

Preparation steps

1.
Purée roughly half of the herbs with the oil and season to taste with salt, ground black pepper and lemon juice.

Cook the pasta in boiling salted water until al dente.
3.
Fry the bacon in a non-stick frying pan without adding fat until crispy, then put to one side. Break the eggs into the same pan and fry for approx. 3 minutes.
4.
Drain the pasta and mix with the puréed herbs. Arrange on plates and top with the eggs and bacon. Add spoonfuls of cream cheese and sprinkle with salt, ground black pepper and chilli. Garnish with parmesan, lemon zest, croutons and the remaining herbs.
