4 thick Tuna steak (each 160 grams of the upper shell)
1 bunch Sage
12 slices Bacon
2 Tbsps butter
100 milliliters white wine
100 milliliters Whipped cream
1 Tbsp Crème fraiche
salt

Preparation steps

Rinse the sage and pluck the leaves.

Preheat the oven to 100°C (approximately 200°F). Line a baking sheet with parchment paper.

Rinse the tuna, pat dry and cover with sage leaves. Wrap 3 slices of bacon around each fillet. Heat the butter in a skillet and saute the tuna briefly on all sides. Remove, reserve the pan, place the tuna on the baking sheet and bake until the tuna is still cold in the center, 8-10 minutes.

Deglaze the pan drippings with white wine, scraping up any browned bits and bring to a simmer. Stir in the cream and creme fraiche, season with salt and cayenne pepper and whisk until frothy.

Slice the tuna and serve on the sauce. If desired, serve with salad.
