Leek is much milder than its close relatives, onions and garlic, but still wonderfully spicy, and leek gets its typical taste from the sulphurous essential oils it contains in abundance. They strengthen the intestinal flora, which plays a decisive role for good defences.
Do you prefer vegetarian? You can also skip the turkey ham - thanks to the spicy Gruyère cheese, the leek quiche is nice and spicy.

Ingredients
- For the dough
- 150 grams Pastry flour
- 100 grams butter
- 1 egg
- 1 tsp salt
Preparation steps
For the dough, mix the flour, butter, egg and salt, knead quickly, wrap in plastic wrap and let rest for about 30 minutes in the refrigerator.
Roll out dough thinly between sheets of plastic wrap and press into the quiche pan, forrming an edge. Preheat the oven to 180°C (approximately 350°F) convection.
For the filling, rinse leeks, trim and cut into thin slices. Mix eggs with the milk, cream, cheese, leeks and bacon and season with salt, pepper and nutmeg. Pour into the pan and bake until golden brown, 45-50 minutes.
