16 slices smoked Bacon

1 Cutting board, 1 Small knife, 1 Large knife, 1 Peeler, 1 Sieve, 1 Measuring cups, 1 Box grater, 1 Wooden spoon, 1 Teaspoon, 1 Tablespoon, 1 Pot, 1 Non-stick pan, 1 Small bowl

Preparation steps

Cut the zucchini lengthwise into 16 thin slices. Brush with oil and sear on both sides in a hot pan. Remove from pan and let cool.

Briefly toast the pine nuts in a dry frying pan, stirring constantly, until lightly browned.
3.
Combine the feta cheese and paprika.
4.
Lay the bacon slices flat and lay a slice of zucchini on top of each slice. Sprinkle feta mixture on top and sprinkle lightly with chopped thyme, rosemary and toasted pine nuts. Roll up and secure with cocktail sticks.
5.
Heat olive oil in a nonstick skillet and cook the bacon rolls for about 2 to 4 minutes, or until golden brown on all sides. Arrange on a platter and serve.
