600 grams waxy potatoes
4 Tbsps olive oil
1 onion
60 grams Bacon
60 grams green Olives (pitted)
6 eggs
50 grams Crème fraiche
1 Tbsp finely chopped parsley
2 Tbsps freshly grated Mountain cheese
salt
freshly ground peppers

Preparation steps

1.

Peel the potatoes and cut into slices. Sauté in some oil in a large, ovenproof pan for about 10 minutes. Turn occasionally to prevent them sticking.

Preheat the oven to 180°C (approximately 350ºF).

Peel the onion and chop finely. Finely dice the bacon. Add both to the potatoes and fry for another 5 minutes.

4.

Cut the olives into slices.

Beat the eggs with the crème fraîche, the olives, the parsley and the cheese and season with salt and pepper. Pour over the potatoes and bake in the oven for about 20 minutes until golden brown.

Serve hot or cold.
