- 200 grams green Beans
- salt
- 600 grams waxy Boiled potato (chilled)
- 3 Tbsps Canola oil
- 140 grams diced Bacon
- 10 eggs
- salt
- freshly ground peppers
- cured ham (for garnish)
- fresh thyme (for garnish)
Preparation steps

Preheat the oven to 180°C (approximately 350°F) convection. Rinse the green beans, trim and blanch in boiling salted water for 6-8 minutes. Shock in ice water, drain and chop. Peel the potatoes and slice.

Heat the oil in an ovenproof, nonstick skillet. Sauté the potatoes and bacon for about 5 minutes, turning occasionally. Meanwhile, whisk the eggs together and season with salt and pepper. Add the green beans to the skillet and pour the egg mixture over top.

Transfer to the oven and bake until the eggs are just set, about 10 minutes. Cut into wedges, arrange on a serving platter and garnish with cured ham and fresh thyme. Serve warm or cold.
