8 slices Smoked bacon
4 Tbsps olive oil
freshly ground peppers
2 handfuls Lettuce (or beetroot leaves, baby spinach, etc.)
300 grams Roquefort cheese
2 Tbsps lemon juice
1 pinch sugar
salt
40 grams chopped Walnut

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F).

Rinse the pears, pat dry and remove the cores. Wrap each pear in 2 slices of bacon and secure with a toothpick. Drizzle the pears with about 1 tablespoon of olive oil, season with pepper and bake for about 20 minutes, until the bacon is crisp and pears are tender. 

3.

Rinse the lettuce leaves, spin dry and distribute onto plates. Crumble the Roquefort cheese over the lettuce. 

4.

Whisk together the remaining oil with the lemon juice and a pinch of sugar. Season with salt and pepper. 

5.

Top the salad with the warm, baked pears, drizzle with the dressing and sprinkle with the chopped walnuts.
