450 grams Pastry flour
½ cube Yeast (21 grams)
½ Tbsp sugar
125 milliliters lukewarm milk
60 milliliters vegetable oil
1 tsp salt
1 egg

Preparation steps

For the dough, dissolve the yeast in warm milk with 1 tablespoon sugar, then mix with flour, oil, salt and egg, and knead well with the dough hook of the hand mixer. Cover the dough and let rise in a warm place for about 30 minutes.

Knead the dough again well and let it rise again for 30 minutes.

To make the bagels, knead the dough on a floured surface and divide into 10 equal portions. Shape each portion into balls, press a hole in the middle of each ball with a diamter of about 4 cm (approximately 1½ inches), such that each ball now resembles a ring. Let rise for 15 minutes.

Drop the prepared bagels in portions in boiling salted water and cook for about 1 minute, turning once. Remove the bagels from water, drain and place on a lined baking tray. Brush with beaten egg white and sprinkle with sesame seeds, sunflower seeds, pumpkin seeds and poppy seeds.

Bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) until golden brown, about 20-25 minutes.
