- 4 Apple
- 2 Tbsps lemon juice
- 50 grams Walnut
- 200 grams Roquefort cheese
- 30 grams Crème fraiche
- salt
- freshly ground peppers
- 20 grams butter
- 100 milliliters white wine
- Fat (for the pan)
- scallions (for garnishing)
Preparation steps

Oil roasting pan.

Rinse and dry apples, cut off tops of apples and core with an apple corer. Place apples into a roasting pan and drizzle wtih lemon juice.

Toast walnuts in a dry pan fry briefly until fragrant, cool and coarsely chop, setting aside four whole nuts.

Combine Roquefort with cream fraiche and season with salt and pepper.

Place whole nuts into apples, fill with cheese mixture and top with chopped nuts. Replace apple lids. Sprinkle apples with chopped butter and pour wine in the pan. Bake in preheated oven at 180°C (approximately 350°F) for about 25-30 minutes.

Arrange on plates and serve garnished with chopped chives.

If desired, serve with light salad.
