- 8 Artichoke
- juice of lemons
- salt
- 3 scallions (finely chopped)
- 100 grams Zucchini
- 100 grams finely diced white bread
- 2 Tbsps butter
- 2 garlic cloves
- 2 Tbsps olive oil
- 50 grams Mozzarella
- peppers
Preparation steps
1.
Rinse artichokes and remove the stems with the lower small leaves. Place the vegetables with the blade tips upward in a large pot of boiling salted water with lemon juice and cook 20 minutes. Remove and drain.

For the filling, sauté the scallions and finely chopped garlic in olive oil. Rinse zucchini, chop finely and cook. Season with salt and pepper.

Drain mozzarella, finely chop, mix in and remove from heat. Toast the white bread cubes in butter and mix in. Place the artichokes in an ovenproof dish and fill with the vegetables. Bake in oven at 200°C (approximately 400°F) for 15 minutes.
