1 ¼ cups Mozzarella (such as Tesco Healthy Living)
¾ cup panko breadcrumbs
cilantro (to garnish)

Preparation steps

1.
Preheat the oven to 220°C (200 fan) | 425°F | gas 7.
2.
Drain the mozzarella and cut into four even rounds, making sure the pieces aren't too wet. Season with salt and pepper then roll in the breadcrumbs and arrange on a lined baking tray.
3.
Bake for 15-20 minutes until golden and crispy on the outside. Remove and arrange on a serving plate with some of the fritters cut.
4.
Garnish with a little pepper and sprigs of coriander before serving.
