1 Tbsp chopped rosemary
1 Tbsp chopped thyme
1 Tbsp scallions
400 milliliters Vegetable broth

Preparation steps

Preheat oven to 200°C (approximately 400°F).

Rinse catfish, pat dry and cut into bite-sized pieces. Rinse, peel quarter and cut potatoes into thin slices. Rinse, trim and cut scallions crosswise into rings. Peel and finely chop garlic. Rinse and halve peppers, remove seeds and ribs and cut into 2 cm thick (approximately 3/4-inch) strips. Combine potatoes, scallions, peppers, garlic and chopped herbs in a baking dish. Add broth and bake about 10 minutes. Season catfish with salt, pepper and paprika and place on potatoes. Bake 10-15 minutes more. Remove and serve.
