- For the base
- 5 ozs Digestive biscuit (crushed to crumbs)
- 0.333 cup unsalted butter (melted)
- For the filling
- 2 ½ cups cream cheese
- ⅔ cup sugar
- 4 large eggs (beaten)
- 1 pinch salt
- ⅞ cup Sour cream
- 4 Tbsps Corn starch
- 1 tsp vanilla extract
- 2 tsps grated lemon zest
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a deep 20cm|8"" springform cake tin.

For the base: mix together the biscuit crumbs and melted butter. Press firmly into the base of the tin. Bake for 20 minutes. Remove and allow to cool.

Reduce the oven temperature to its lowest setting.

Beat the cream cheese until smooth. Beat in the remaining ingredients until blended. Pour onto the biscuit base.
5.
Bake for about 90 minutes, , until set, but still slightly wobbly in the middle. Cool completely in the turned off oven, with the door slightly open.
