- 4 eggs
- 4 Tbsps Crème fraiche
- 0.333 cup shrimp (prepared)
- 1 cup green Asparagus tip
- 2 Chervil (leaves stripped)
- salt
- freshly ground Black pepper
- butter (for the dishes)
- Chervil (to garnish)
Preparation steps
1.
Break each egg carefully into a buttered cocotte (or cup). Season with salt and pepper and spoon 1 tbsp crème fraîche into each.

Divide the shrimps, chopped chervil leaves and asparagus tips between the four cocottes.
3.
Place the cocottes in a baking dish filled with boiling water and cook in a preheated oven (220°) for about 8 minutes.
4.
The egg whites should be set and the yolks should be soft, but not runny. Garnish with chervil leaves and serve immediately.
