2 Dentex fish (each about 500 grams, ready to cook)
juiced lemons
1 onion
2 garlic cloves
500 grams Tomatoes
1 Zucchini
4 Tbsps olive oil
250 milliliters white wine
salt
freshly ground peppers
100 grams black Olives

Preparation steps

1.

Rinse and pat dry fish, score on both sides diagonally.

Drizzle fish with lemon juice and season with salt and pepper. Peel onion and garlic, chop both finely. Blanch tomatoes in hot water for a few seconds, rinse in cold water and peel. Quarter and remove seeds. Rinse and slice zucchini.

Heat 3 tablespoons of olive oil in a pan and saute onion and garlic until translucent. Add white wine and bring to a boil. Add tomatoes and zucchini and simmer, covered, for 5 minutes. Season with salt and pepper. Spread vegetables in a greased baking pan and top with fish. Drizzle fish with remaining olive oil and spread with olives. Bake in preheated oven at 200°C (approximately 400°F) for about 20 minutes. Garnish with basil and serve.
