1 White roll (day old)
125 milliliters milk (1% fat, lukewarm)
2 red onions
4 garlic cloves
2 stalks oregano
600 grams Ground sirloin
1 egg
salt

2 Tbsps olive oil
150 milliliters dry Red wine (or broth)
600 grams crushed Tomatoes
1 ball Mozzarella (125 grams)
1 bunch Basil

Preparation steps

Soak roll in the warm milk. Peel and mince onions and garlic. Rinse oregano, shake dry, pluck leaves and chop.

Squeeze roll to remove excess liquid and combine in a bowl with ground beef, half of the garlic and the egg. Season with salt and pepper. Form into small meatballs, each about 30 grams (approximately 1 ounce).

Heat oil in an ovenproof pan. Cook meatballs over medium heat until all sides are golden brown. Add onions and remaining garlic and sauté briefly, then deglaze with red wine and cook until evaporated. Add tomato and season with oregano, salt and pepper. Simmer for about 10 minutes over medium heat.

Meanwhile, drain mozzarella, slice and layer on top of meatballs. Preheat oven's broiler and place pan under broiler and cook until browned and cheese is melted, about 3 minutes, watching carefully.

Rinse basil, shake dry and pluck leaves. Serve meatballs with sauce and sprinkle with basil.
