- 1 onion (chopped)
- 3 cups cremini Mushrooms (sliced)
- 6 cups Sweet potato (peeled, blanched and diced)
- 6 eggs
- 2 Tbsps fresh rosemary (finely chopped)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ½ cup Swiss cheese (shredded)
- ½ cup Provolone cheese (shredded)
Preparation steps

Preheat broiler. In a large pan over medium heat, saute onion until soft but not browned. Add mushrooms and continue to cook until they begin to caramelize. Add the potatoes and stir to combine with onions and mushrooms.

Whisk the eggs, rosemary, salt and pepper together and pour into pan over onions, mushrooms and sweet potatoes. Cook on a low heat, gently tilting the pan to evenly distribute the eggs and ensure it cooks evenly.
3.
When cooked sprinkle both cheeses on top and broil until cheese is melted and edges are slightly crisped.
