- 800 grams onions
- 2 Tbsps sunflower oil
- 1 tsp sugar
- salt
- freshly ground peppers
- 800 milliliters Beef broth
- 200 milliliters dry white wine
- 2 garlic cloves
- 1 tsp lemon juice
- 4 slices Baguette
- 80 grams freshly grated Gruyere
Preparation steps

Peel onions and cut into thin rings. Heat oil in a saucepan and saute onions for 10-15 minutes, stirring, until soft. Season with sugar, salt and pepper and saute for another 10 minutes, stirring occasionally, until golden brown.

Add broth and wine, bring to a boil and lower heat. Simmer for another 15 minutes. Peel garlic and squeeze through a garlic press into soup, season with lemon juice, salt and pepper.

The oven to preheat grill.

Pour onion soup into 4 ovenproof ramekins (or ceramic bowls). Place 1 slice of bread into each ramekin and sprinkle with cheese. Bake under a broiler for about 5 minutes or until cheese is melted and lightly browned, watching carefully. Remove from oven and serve immediately.
