1 tsp grated, fresh Lemon peel
2 egg yolks
50 grams Mascarpone

Preparation steps

1.

Blanch peaches for a few seconds, rinse in cold water and peel. Halve and pit. Remove parts of peach pulp and chop. Chop walnuts, setting some pieces aside for garnishing, and combine with peach pulp, honey, lemon juice, zest, egg yolks and mascarpone.

Butter baking dish and arrange peach halves into it, cut side up. Stuff with filling and top with reserved walnuts. Bake in preheated oven at 200°C (approximately 400°F) for about 15 minutes. Remove from oven and cool. Drizzle with port wine and garnish with lemon balm leaves, serve.
