1 kilogram potatoes (waxy)
3 Tbsps olive oil

80 grams Pastry flour
1 Tbsp ground paprika (sweet)
200 grams onions
250 milliliters vegetable oil
100 grams Raclette Cheese
1 bunch Chives

Preparation steps

Peel potatoes, rinse, cut lengthwise into slices and mix in a bowl with oil, salt, pepper and herbs de Provence. Peel garlic, squeeze through a press into the bowl and mix again. Line a baking sheet with parchment paper. Spread potato slices on the baking sheet and bake in a preheated oven at 200°C (approximately 400°F) for 20-25 minutes. Turn potato slices over occasionally.

Mix flour in a bowl with salt, pepper and paprika. Peel onions, cut into thick rings and dredge in flour. Heat oil in a pot, fry onion rings in portions for 3-5 minutes and then drain on paper towels.

Grate raclette cheese and spread over potatoes. Bake in the preheated oven until cheese is melted.

Rinse chives, trim, shake dry and cut in rolls. Serve potatoes and onion rings on a plate garnished with chives.
