3 Tbsps Ghee
2 bay leaves
1 sm can Saffron
2 tsps Cumin (ground)
4 Tbsps cilantro

Preparation steps

Rinse and scrub potatoes thoroughly. Rinse, trim and cut scallions diagonally into 2 cm wide (approximately 3/4 inch wide) rings. Heat ghee in a saucepan. Add potatoes and scallions and cook briefly. Add 100 ml (approximately 1/2 cup) water, bay leaves, saffron, cumin and 2 tablespoons cilantro. Season with salt and pepper. Cover and bake in an oven preheated to 200°C (approximately 400°F), about 30 minutes. Then remove the cover and bake 15 minutes more. Stir in remaining 2 tablespoons cilantro and lime juice.
